To ensure consistent quality despite climatic variations, we conducted thorough evaluations of the soil for planting. With the goal of minimising variability factors each year, we carefully selected the best soils in the area and expanded our research to neighbouring regions within the Bolgheri DOC area.

Use of Innovative Soil Techniques

Thanks to the collaboration with Chilean consultant and soil mapping expert Pedro Parra, Nelson Muñoz Jara (AgroPrecision), and Françoise Vannier of Adama Terroirs Viticoles, we have successfully introduced MRS (Magnetic Resonance Sounding) technology in our company. This innovative technology has led to extraordinary results in soil analysis, allowing us to deeply understand the unique characteristics of our terroir and optimise grape production to ensure superior quality. Parra's work is widely recognized as one of the most important in modern viticulture, capable of redefining the concept of terroir and elevating wine to a higher level.

Xavier Choné has gained extensive experience in the wine industry through his extraordinary work in mapping and understanding wine terroirs worldwide for over twenty years, starting with Leoville Las Cases and continuing to make an indelible mark on the soil culture of Médoc. His deep knowledge of terroir and his ability to improve wine quality have made his consultancy valuable for numerous wineries, inspiring a new generation of winemakers and consolidating his status as a renowned expert in terroir and viticulture. Choné has provided essential contributions to our work, helping us develop strategies to optimise the quality of our grapes and wines.

Through meticulous research, we have identified the ideal combination of rootstocks and clones for Cabernet Sauvignon, Cabernet Franc, and Merlot, resulting in about 20 combinations of vine, clone, and nursery. Our approach to vineyard management revolves around a deep understanding of the soil and its unique characteristics, which are fundamental in cultivating grapes of exceptional quality.

Optimization of Grape Varieties

Thanks to Eric Boissenot's expertise in oenological consultancy and as the current winemaker for four of the five Premier Cru of Bordeaux—Latour, Lafite-Rothschild, Margaux, and Mouton-Rothschild—we have refined our grape selection process. Boissenot's family legacy and his deep understanding of terroir have made him a reference point in the international wine sector. For his first involvement in the Bolgheri oenological scene, viscerally connected to Bordeaux, he chose our project and vineyards. We are proud and honoured to benefit from his immense professional figure. Additionally, Emiliano Falsini, a prominent member of the Matura group and one of the most sought-after Tuscan winemakers, collaborates with us in daily choices to create a unique and distinctive style. He is joined by Gianni Moscardini, an agronomist and technical director of our project, who brings profound agronomic knowledge and extraordinary passion for viticulture.

The training systems, vineyard management, and winemaking techniques are the result of these great professionals collaborating for the first time in the pursuit of perfection. All of this is assisted by the most modern technologies, without in any way distorting the essence of the Bolgheri terroir but rather aiming to elevate it to its status of excellence.

Harvesting and Selecting Grapes with Care and Precision

In the harvesting process, every moment represents meticulously orchestrated work that requires not only precision but also a deep appreciation for the art of winemaking. At our estate, the essence of this art is expressed in the careful manual harvesting of the grapes during the coolest hours of the day. This gesture preserves the delicate flavours and aromas that characterise our wines, giving them timeless elegance.

The selection of grapes constitutes the core of our creative process. In every corner of the vineyard, during the veraison phase and throughout the harvest, we engage in a rigorous selection process aimed at best expressing the extraordinary potential of our parcels rich in skeleton and with fresh exposures. This process of extreme precision and statistics allows us to identify over time the plots that express themselves best, using in parallel the results of studies by the great professionals we collaborate with.
