After the first stage of selection, the grapes go through a second selection on a vibrating table, where only those representing the pinnacle of quality enter the next stage of our control. The selected grapes are then placed in untreated concrete tanks, using small trolleys that allow the tanks to be loaded from above without the use of pumps.

Our commitment is to preserve as much as possible the authentic character of our terroir, the result of tradition, climate, soils and collective knowledge. Fermentation takes place under optimal conditions thanks to our innovative differential refrigeration systems, which allow flavours to develop while protecting the identity and spontaneity of aromatic components and polyphenols. After fermentation, a pressing process separates the juice from the skins and seeds, beginning a unique journey for each wine.

Every step of our process is designed to respect and enhance the work done in the vineyard, seeking to enhance the identity of each individual plot.
